The Marennes-Oléron Oyster is an oyster raised in the Marennes-Oléron basin in Charente-Maritime.

This region is renowned for its “claires” (saltwater clay ponds used for finishing), which give these oysters unique characteristics in both taste and texture.

La Sélection: an exceptional Oyster

La Sélection is one of the most prestigious oysters from the Marennes-Oléron basin, which guarantees superior quality and a specific farming method.

Key Characteristics
Prolonged finishing in Claires


Unlike other oysters that spend just a few weeks in the claires, La Sélection is aged for at least four months with a very low density (fewer than five oysters per square meter). This slow growth results in particularly firm and crunchy flesh.

Powerful flavor and meaty texture

Its flavor is intense, marked by a strong briny taste with hints of hazelnut.
Its texture is firm, almost crunchy, setting it apart from more common oysters.

Imposing size


La Sélection is notably large—often bigger than traditional oysters of the same grade.

Distinctive color


A slight greenish tint may appear, caused by the presence of a specific algae (Navicule Bleue), which enriches its flavor.

How it differs from other Marennes-Oléron Oysters

Fines de Claire


Aged in claires for 2 to 6 weeks at a density of 20 oysters per square meter. They tend to have a milder flavor and are less meaty.

Spéciales de Claire


Aged longer (at least 4 weeks) with a lower density (10 oysters per square meter), resulting in meatier oysters than Fines.

La Sélection


Extremely long finishing (4 months or more), firm flesh, robust flavor, and the Label Rouge certification.
